Sweet Like Honey: A Unique Peruvian Coffee from Huabal

High in the Andes mountain range above the city of Jaen, Huabal district is home to many farmers responsible for cultivating some of Peru’s best coffee. CENFROCAFE, founded in 1999, represents more than 2,000 members in local associations in Cajamarca. Farmers from three local associations in Huabal contributed the coffee cherries that comprise this particular lot of coffee. Those associations are Brillante Perla Andina, La Flora de la Agua Colorada, and Piadosa Santa Rosa de Lima.

Prior to being depulped, these coffee cherries rested for a twenty-four hour period before being dried on raised beds to remove moisture. This processing method, known as the honey process, involves allowing the coffee to dry in its mucilage. Some of the fruit remains on the coffee as it dries and imparts sugars that affect the coffee’s aroma and flavor, as well as its behavior during the roasting process. A major benefit of honey processed Peruvian coffee is that it demands much less water than a traditional washed process coffee.

The honey processing method is capable of producing coffees that are complex and fruity, and our Honey Peru Huabal is no exception. Its smooth and velvety body pairs well with a mild acidity and delicate melon and blackcurrant flavors. Without question, this is one of the most unique Latin American coffees we currently offer and is representative of some of the finest coffee from Peru.
