Honey Process Coffee of that’s Sweet as Cherry Pie

This rich and syrupy honey-processed coffee is from the farm Los Pirineos in El Salvador. Cherry, maple syrup, and brown sugar in the aroma give way to decadent praline and toffee flavors.

Gilberto Baraona is one of El Salvador’s most accomplished coffee producers. He has won 15 Cup of Excellence awards and has devoted many years to improving his craft. His farm, Los Pirineos, is located on a stand-alone cone-shaped volcano between the municipalities of Berlín and Santiago on the country’s southern Pacific side.

Gilberto’s coffee has received many accolades, and he is renowned for his processing methods and experimentation with coffee varieties and mutations. Our Honey El Salvador offering is comprised of a variety of coffee called Pacamara, which is known for its large cherries. The drying facility at Los Pirineos is also fairly unique, as the drying beds are located between two mountain peaks that create a wind tunnel capable of drying coffee more efficiently.
